Mango Yogurt Mousse

Yep, it’s raining mangoes in my backyard and I ain’t complaining. Found a couple of recipes on the web, but ended up not following any {surprised?} and just made this up with a little from each.  Some comments said that one envelope of gelatin was too little for two cups of yogurt, I like my mousse spongy so I went with the 2:2.

On a small saucepan combine 2 envelope unflavored gelatin powder with 1/4 cup of water, turn on heat to low and stir until gelatin is completely dissolved | Blend meat of 3 ripe mangoes, 1/3 cup condensed milk {or sugar}, 1 t vanilla extract and the gelatin until puree | In a bowl mix 2 cups Greek Yogurt {Chobani is my fave} with the mango puree | When all is completely combined, pour into individual ramekins or large pan | Refrigerate for at least 6 hours.
