Curried Tofu Salad

Prepared this in about 15 minutes.  Tomorrow’s lunch is ready.

•8 oz. cubed super firm tofu (or use chicken)

•½ cup Olive Oil Mayonaise

•1 tsp. Dijon mustard

•2 scallions thinly chopped

•¼ cup diced green apples

•¼ cup raisins

•¾ cup shredded carrots

•1 tsp. curry powder

Place the tofu in a large bowl. Add the mayonnaise, mustard, curry powder. Carefully mix well, then stir in the rest of the ingredients. Chill before eating. Optionally assemble them into a whole wheat pita or make lettuce wraps with it.
